Rhubarb is definitely among my most favorite early summer yummies. If you have never tried it, I strongly suggest you go out asap and get some from your local farmers market or grocer. Gorgeous and delicious... I have several recipes that I love to make with fresh Rhubarb including making it into jam. 

This 4 ingredient Ruby Red Rhubarb Jam comes together so easily and it has an out of this world taste. There is nothing like homemade jam - no fillers or additives of any kind, simply good for you healthy ingredients and a ton of flavor. Perfect on toast or muffins for breakfast, over waffles or spread on pancakes, you can even enjoy this versatile jam as a topping on yogurt or (n)ice cream!

Ruby Red Rhubarb Jam

  • Cooking pot
  • Sealable glass container


  • 2 cups rhubarb washed and cut into 1" pieces
  • cup maple syrup
  • 1 tsp fresh lemon juice
  • ¼ tsp vanilla


  • Add all the above ingredients to a pot and cook over medium heat.
  • Allow the mixture to simmer while stirring with a wooden spoon until the rhubarb begins to break down (about 5-7 minutes).
  • Remove the pot from heat and allow to cool.
  • Decante to a sealable glass container and enjoy on toast, muffins, pancakes or waffles, as a topping for yogurt or any place you enjoy jam!
    Refrigerate for up to a month
