This Creamy Lemon Orzo is a perfect main course or side dish for family style meals indoors or al fresco. The earthy mushrooms bring an umami flavor that complements the rich sweet green peas, and crisp lemon juice adds a brightness that evokes Spring.

Creamy Lemon Orzo with Spinach and Sweet Green Peas

  • Large Pot


  • 2 tbsp olive oil
  • 2 cups sliced mushrooms
  • pinch salt
  • 3-4 garlic cloves chopped
  • 16 oz orzo
  • 6 cups vegetable broth
  • 1 cup  Cascadian Farms Frozen Organic Sweet Peas
  • 2-3 handfuls spinach
  • 3 lemons juiced

Optional Garnish

  • parsley


  • Heat oil in pot on medium high heat. Add sliced mushrooms and salt, stirring periodically until mushrooms release water, then stir in garlic and cook for an additional minute.
  • Add orzo to pot, stirring to coat, then slowly add broth while stirring. Bring to boil for about 10 minutes.
  • When orzo appears thick and creamy, add peas and simmer an additional 2 minutes.
  • Reduce heat, add spinach and cover pot for several minutes.
  • Remove lid, stir wilted spinach to incorporate into orzo and once combined, drizzle lemon juice on top.
  • Serve immediately or allow to sit at room temp for up to three hours.

    Love these bars. They are healthy, plant based, and easy to make. I grab one or two with a bowl of fresh fruits and a cup of hot tea and that’s breakfast and I stay full until afternoon.
