This dressing will stay fresh in your refrigerator in a sealed container for up to 6 days.
- 3 pcs carrots peeled and rough chopped
- 1 1/2 inch piece fresh ginger chopped
- 1/3 cup rice vinegar
- 1/3 cup olive oil
- Juice of 1 lime
- 2 tbsp maple syrup
- 1 tsp sesame oil
- a pinch of salt
- Place all ingredients in a food processor or blender and process or blend until smooth and creamy.
