Pumpkin Spice Protein Bars

Dry ingredients
  1. 2 cups gluten-free all-purpose baking flour (I use Bob's Red Mill)
  2. 1 1/2 teaspoons Xanthan Gum (available in most health food stores)
  3. 1/2 cup Sprout Living’s Pumpkin Seed Protein Powder (click button below)
  4. 1/2 teaspoon allspice
  5. 1 1/4 teaspoon cinnamon
  6. 1/4 teaspoon nutmeg
  7. 1/4 teaspoon ginger
  8. 1 teaspoon cream of tartar
  9. 1 teaspoon aluminum-free baking powder
  10. 1/4 teaspoon vanilla bean powder
  11. Optional - 1/2 cup chopped walnuts
Wet Ingredients
  1. 2 cups pumpkin puree (you can buy ready made in BPA free containers or make your own - see below)
  2. 1/2 cup goji berries or raisins
  3. 1/2 cup dates, chopped
  4. 1 cup maple syrup
  5. 1/2 cup black strap molasses
  6. Flax “eggs" - 2 tablespoons ground flax and 6 tablespoons water mixed well and then let sit until thickened (about 6-10 minutes)
Instructions
  1. In one bowl, mix dry ingredients together.
  2. In a separate bowl, mix wet ingredients together.
  3. Fold wet ingredients into dry ones, mixing by hand until well-combined.
  4. Then spoon mixture into 8"X11" glass baking pan, smoothing surface before baking.
  5. Bake at 350 degrees for 45 to 50 minutes (you can test by placing a toothpick in the center, you want it to come out clean), and when done, cool for at least 15 minutes. Cut into bars and enjoy!
